This is an old Southern recipe passed down through generations

  • Tony Chachere’s seasoning mix
  • Garlic powder
  • Black pepper
  • 2 TBS butter
  • 2 TBS vegetable oil
  • ½ cup flour
  • ½ cup vegetable oil
  • 1 medium onion, chopped fine
  • 4 cans Blue Runner lima beans
  • 1 can water
  • 1 tsp Worcestershire sauce
  • ½ tsp basil
  • ½ tsp thyme
  • ½ tsp garlic powder
  1. Wash and season drumettes with Tony’s, garlic powder, and black pepper
  2. Place chicken into baking dish uncovered and brown with butter and oil at 375? for 40 minutes; turning often
  3. Into a deep skillet or dutch oven combine oil and flour over medium high heat, stirring constantly until a medium brown roux has developed (about 30 minutes)
  4. Add onion to roux and continue stirring until union has softened—about 8 minutes
  5. Add lima beans and water to roux mixture
  6. Season with next 4 ingredients
  7. Cook covered over medium heat for about 1 hour; stirring often; mixture should be soupy
  8. Add chicken for last 25 minutes
  9. Serve over steamed rice

Serves 4-6
