Best Scalloped Potatoes

- 5 medium baking potatoes, thinly sliced
- 1 medium onion, thinly sliced into half rounds
- ½ tsp salt
- ½ tsp black pepper
- 2/3 cup water
- ½ stick butter
- ¼ cup flour
- 1 ½ cups Half & Half
- 1 tsp roasted garlic
- ½ cup sour cream
- ¾ cup Co-Jack cheese
- Into a microwavable dish, alternately layer potatoes and onions, season with salt and pepper
- Put 2/3 cup water into bottom of dish, cover, and microwave on high for 15 minutes, remove, drain and set aside
- In a sauce pan melt butter and slowly whisk in the flour, continue whisking until and smooth consistency for about 5 minutes, until mixture begins to turn brown
- Slow add Half & Half, whisking constantly
- Add garlic, sour cream and cheese, creaming all together over low heat
- Place potatoes and onions into greased casserole and top with cream mixture being sure that sauce gets between layers
- Bake at 350? for 25 minutes, until top begins to turn brown
