Baked Jack Corn

  • 2 large eggs, lightly beaten
  • 1 ½ cups sour cream
  • 2 cups fresh corn kernels (if available)
  • 8 ounce package of Monterrey Jack cheese, cut into ¾” cubes
  • ½ cup seasoned breadcrumbs
  • 1 4.5 ounce can chopped green chilies, drained
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded cheddar cheese
  1. Combine eggs and sour cream into a large bowl
  2. Stir in corn and next 5 ingredients
  3. Pour mixture into a greased baking dish
  4. Bake at 350° for 35 minutes; sprinkle with cheddar cheese and bake additional 5 minutes
  5. Let stand 10 minutes before serving
