Baked Jack Corn

- 2 large eggs, lightly beaten
- 1 ½ cups sour cream
- 2 cups fresh corn kernels (if available)
- 8 ounce package of Monterrey Jack cheese, cut into ¾” cubes
- ½ cup seasoned breadcrumbs
- 1 4.5 ounce can chopped green chilies, drained
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup shredded cheddar cheese
- Combine eggs and sour cream into a large bowl
- Stir in corn and next 5 ingredients
- Pour mixture into a greased baking dish
- Bake at 350° for 35 minutes; sprinkle with cheddar cheese and bake additional 5 minutes
- Let stand 10 minutes before serving
