Artichoke-Rice Casserole

- 1 box of chicken flavored rice
- ½ bell pepper, finely chopped
- 4 green onions, finely chopped
- 12 small pimento-stuffed olives, sliced
- 1 tsp curry
- ½ cup mayonnaise
- 1 small jar of marinated artichokes; any tough outer leaves removed; reserve oil
- Cook rice according to box directions
- In a bowl combine all ingredients and place in greased casserole
- Bake in 350o oven for 25 minutes; serve hot
